It is really tasty and plates up pretty too. (Wish I knew how to use my digital camera si I could send ya'll a picture.) Ingredients:
3 green onions, tops and bottoms snipped with kitchen shears |
2-tbspn butter |
1-tspn garlic |
1 pkg. butterhead lettuce (or 1 head) shredded |
2-cups frozen green peas |
1/2-cup hot chicken broth |
1-tspn coarse salt |
Directions:
1. Cook the green onions and garlic in the butter until soft. 2. Stir in the lettuce and when it is wilted add the frozen peas and chicken broth. 3. Simmer - uncovered - until everything is tender and the liquid is flavorful and reduced. |
