Saucy recipe with celery and onions. Family favourite. Serve with rice or mashed potatoes to make good use of the sauce. Ingredients:
1 chicken, cut up (3 lbs. approx) |
1/4 cup oil |
2 medium onions, sliced (1/4 inch) |
1/2 cup chopped celery |
1 cup ketchup |
1 cup water |
1/4 cup vinegar (or lemon juice) |
2 -3 tablespoons worcestershire sauce |
2 tablespoons brown sugar |
2 tablespoons yellow mustard |
Directions:
1. Brown chicken slowly in skillet in 1/4 cup of salad oil. 2. Remove chicken. 3. In skillet, cook onions and celery until tender. 4. Add remaining ingredients. Season with salt and pepper to taste and simmer for 10 minutes (sometimes I skip the simmering). 5. Place chicken in 9x11 baking dish. 6. Pour sauce over chicken. 7. Bake uncovered in slow oven (325-350 degrees) for 1 1/4 hrs or until done. |
