Adapted from Cookbook of Foods from Bible Days. The name refers to Genesis 25:33. Heating and soaking time is included in prep time. Ingredients:
1/2 lb red lentil, washed and picked over |
1 quart water |
1/2 cup olive oil |
1 onion, chopped |
2 garlic cloves, crushed |
1/2 teaspoon fennel seed, crushed |
salt (optional) |
Directions:
1. Place lentils and water in a large pot. 2. Bring to a boil and boil for 5 minutes. 3. Remove from heat and set aside to soak for 1 hour. 4. Return pot to heat. 5. Add oil, onion, garlic and fennel. 6. Simmer gently for 35 minutes, or until lentils are tender. 7. Season with salt if desired. |
