This is a delicious warming winter soup. It is perfect for all vegetarians who crave for a full taste. You can swap tofu for seitan. My boyfriend made this up on a chilly winter evening and with his blessing I'm sharing it with you. I hope you will enjoy it! Ingredients:
2 chopped red onions |
4 tablespoons olive oil |
100 g smoked tofu, cubbed |
2 tablespoons flour |
250 g canned lentils (drained weight) |
1250 ml vegetable broth |
100 ml tomato puree |
1 teaspoon sage |
1/2 teaspoon rosemary |
1 teaspoon oregano |
pepper |
salt |
cayenne pepper |
Directions:
1. Heat the oil and cook chopped onion until it is brown and aromatic. 2. Add tofu and flour and cook for another minute. 3. Stir in vegetable broth, drained lentil and tomato puree. 4. Add herbs and spices. Salt if necessary. Cook for 20 minutes. 5. Serve hot. |
