Nice recipe from a friend for a lentil substitute for taco meat. Ingredients:
1 cup finely chopped onion |
1 garlic clove, minced |
1 teaspoon canola oil |
1 cup dry lentils |
1 tablespoon chili powder |
2 teaspoons ground cumin |
1 teaspoon dried oregano |
2 1/2 cups vegetable broth |
1 cup salsa |
Directions:
1. Saute the onion and garlic in oil until tender. 2. Add the lentils, chili powder, cumin and oregano. 3. Cook and stir for 1 minutes. 4. Add broth and bring to a boil. 5. Reduce heat, cover, and simmer for 25-30 minutes or until lentils are tender. 6. Uncover and cook for 6-8 minutes or until mixture is thickened. 7. Mash lentils slightly. 8. Stir in salsa. |
