vegetarian stew Ingredients:
575 g dried lentils, sorted and rinsed |
3 cups water |
14 oz vegetable stock |
14 oz diced tomatoes |
1 large onion, chopped |
1 green bell pepper, chopped |
4 stalks celery, chopped |
1 medium carrot, sliced |
2 cloves garlic, chopped |
1 teaspoon dried marjoram |
1/4 teaspoon black pepper |
5 cups cooked couscous |
Directions:
1. Combine all ingredients in a large pot, bring to the boil then cover and simmer until lentils and vegetables are cooked (about 2 - 3 hrs) 2. Serve over couscous |
