We love this lentil stew.
Ingredients:
1 cup dry lentils
2 1/2 cups water
2 beef bouillon cubes
1/2 lb ground beef, cooked and drained
2 carrots, sliced
2 cups tomato juice
1/2 teaspoon dried oregano
1/2 cup chopped onion
2 celery ribs, chopped
1 garlic clove, minced
Directions:
1. Clean and rinse lentils.
2. In a saucepan, bring lentils, water and bouillon to a boil.
3. Reduce heat and simmer, uncovered, about 20 minutes.
4. Stir in remaining ingredients.
5. Return to a boil, reduce heat and simmer 20-30 minutes longer or until the vegetables are tender.
