We love this lentil stew. Ingredients:
1 cup dry lentils |
2 1/2 cups water |
2 beef bouillon cubes |
1/2 lb ground beef, cooked and drained |
2 carrots, sliced |
2 cups tomato juice |
1/2 teaspoon dried oregano |
1/2 cup chopped onion |
2 celery ribs, chopped |
1 garlic clove, minced |
Directions:
1. Clean and rinse lentils. 2. In a saucepan, bring lentils, water and bouillon to a boil. 3. Reduce heat and simmer, uncovered, about 20 minutes. 4. Stir in remaining ingredients. 5. Return to a boil, reduce heat and simmer 20-30 minutes longer or until the vegetables are tender. |
