This lentil soup is the perfect meal on a cold day. It is warm and flavorful and filled with tasty, fresh vegetables. Top it with yogurt and fresh parsley and enjoy! Ingredients:
1 tbsp vegetable oil |
2 cloves garlic, minced |
1 onion, chopped |
1 celery stalk, chopped |
1 carrot, chopped |
1 tsp dried marjoram |
1tsp dried thyme |
1/4 tsp pepper |
salt |
2 c vegetable stock |
2 c water |
1/4 c barley |
1/4 c fresh parsley, chopped |
1 c brown or green lentils |
1 c plain nonfat yogurt |
1/4 c plain low-fat yogurt (optional) |
1 tbsp fresh parsley, minced (optional) |
Directions:
1. Heat oil over medium heat in large saucepan. 2. Saute together onion, celery, carrot, marjoram, thyme, pepper and salt until onions are soft. 3. This will take about 5 minutes. 4. Then add water, stock, barley and lentils and bring to boil. 5. Reduce heat and simmer, covered, until lentils and barley are tender. 6. This will take about 40 minutes. 7. Stir in parsley prior to serving. 8. Top each serving of soup with a spoonful of yogurt. 9. Finally, sprinkle a dash of chopped parsley and ENJOY!! |
