From Coup de Pouce. Ingredients:
2 slices bacon, chopped |
1 onion, chopped |
2 carrots, sliced |
1 1/2 cups dry green lentils, rinsed |
6 cups chicken broth |
1 bay leaf |
1 teaspoon cumin |
1/4 cup fresh parsley, chopped |
Directions:
1. In a saucepan, brown the bacon. Remove the bacon and set aside. 2. Add onion and carrots, cook 5 minutes. 3. Add lentils, chicken broth and bay leaf. 4. Let simmer 25 to 30 minutes. 5. Add the bacon, cumin and parsley. |
