I make this basic lentil soup for my family often. Ingredients:
2 cups red lentils, rinsed and drained |
6 cups water |
1 onion, chopped |
1 teaspoon cumin |
1 teaspoon salt |
1/2 teaspoon black pepper |
1 lemon, juice of |
Directions:
1. Place lentils in pan, add water and bring to a boil, skimming foam as needed. 2. Add onion, cumin, salt and pepper, mix well and simmer on medium low for 45 minutes. 3. Stir occasionally. 4. Add more water as necessary. 5. Add lemon juice before serving. 6. Good served with chopped parsley, onions and/or lemon wedges. |
