A hearty soup, great for a cold day. Enjoy a healthy sandwich with a cup of the soup. (Serving size is one cup or 284 grams) Ingredients:
1/2 lb. lentils |
6 cups water |
2 carrots, chopped |
1 clove garlic, crushed |
1 1/2 cup low sodium tomato juice |
1/2 cup minced parsley |
1 t butter |
1 tsp. salt |
1 dash pepper |
1/2 tsp. dried oregano |
Directions:
1. Combine the lentils and water in a kettle. Cook 30 minutes or until lentils are tender. Add everything else. Bring the soup to a boil. Reduce heat. Simmer just until carrots are tender. 2. Option: Add diced bacon or ham cubes or stir in 1 T wine vinegar just before serving the soup. |
