Supah-healthy, hearty, easy to make lentil soup. A bastardized version of me mum's. Ingredients:
9 cups water |
16 oz. lentils |
4 vegetable bouillon cubes |
1 tbs salt |
2 tsp pepper |
2 cups celery |
2 cups carrots chopped |
1 clove garlic |
1/2 cup onion chopped |
Directions:
1. In a large pot, combine water, salt, pepper, bouillon cubes, garlic (whole), and chopped onions. Bring to a boil. 2. Add lentils, allow to boil for about 3 minutes, then cover and simmer for about 10 minutes. 3. Add celery and carrots, and any other veggies you'd like. cover and simmer again for 15 more minutes or until veggies and lentils are tender. 4. Serve with croutons or toasty buttered bread for crunchiness. |
