A stick to your ribs vegetarian soup, from the Moosewood Cookbook Ingredients:
3 cups raw lentils |
7 cups water or stock |
2 tsp salt |
2 tsp minced garlic |
1 cup minced onion |
1 cup minced celery |
1 cup chopped carrots |
1 pinch of ground black pepper |
1 1/2 cups chopped tomatoes |
2 tbsp dry red wine |
2 tbsp lemon juice |
1 1/2 tbsp brown sugar |
1 tbsp vinegar |
Directions:
1. Simmer lentils, water and salt over low heat, 3-4 hours. 2. Steam garlic, onion, celery, carrots till tender; add to lentils and continue to simmer. 3. 30 minutes before serving, add pepper, tomatoes, red wine, lemon juice, brown sugar and wine vinegar to the pot. Taste, and add season as desired. Options include thyme, oregano, basil, hot sauce, etcetera. |
