Sometimes I substitute other things for the lentils : TVP, ground soy beef , brown rice, oats...whatever. This is great over toasted whole wheat buns or rice. Ingredients:
2/3 cup lentils |
3/4 cup onion, diced |
3/4 cup green pepper, diced |
1/2 cup celery, diced |
1 jalapeno pepper, diced (optional) |
1 garlic clove, minced |
1 cup water or 1 cup vegetable stock |
1 cup tomato sauce |
1/2 cup ketchup |
1/2 cup chili sauce |
1 tablespoon brown sugar |
1 tablespoon apple cider vinegar |
1 tablespoon dijon mustard |
1 teaspoon worcestershire sauce (regular or vegetarian) |
Directions:
1. Combine all ingredients in a pot and simmer about 2 1/2 - 3 hours or until lentils are very soft. |
