This is a little bit different than the ordinary Shepherd's Pie. Ingredients:
5 potatoes |
3 tablespoons reduced fat margarine |
4 tablespoons water |
2 (19 ounce) cans lentils, rinsed and drained |
1 1/2 cups tomato sauce |
1 onion, diced |
2 garlic cloves, chopped |
1 tablespoon oregano |
1 tablespoon basil |
Directions:
1. Boil potatoes for mashed potatoes. 2. Mash potatoes with water+margarine. 3. Preheat oven to 350 degrees. 4. Spray pan with non-stick cooking spray. 5. Saute onion and garlic. 6. Add lentils, tomato sauce and herbs and cook 15 minutes. 7. Pour lentils into a baking pan and cover with mashed potatoes. 8. Bake in oven for 20min. |
