This salsa goes well with all grilled fish, tuna, sea bass and salmon etc Ingredients:
40 g green lentils, rinsed |
1 large tomato |
1/4 medium red onion, peeled |
1 peppers, hot chili, red, halved and deseeded |
2 tablespoons fresh coriander leaves |
38 g lime juice, (juice of one lime) |
Directions:
1. Rinse lentils and boil in 4fl oz water, gently simmer for 30 mins or until soft 2. While lentils are cooking, skin tomato and chop very small. 3. Chop onion, coriander and chili very small and add to tomato. 4. When the lentils are cooked, drain them and toss with the juice of 1 lime. 5. Stir in the tomato mixture, cover and rest for at least 1 hour. |
