Lentil Salad with Smoked Sausage |

A really delicious main dish salad. Especially good all the time. Ingredients:
2/3 cup dried lentils, uncooked |
1 teaspoon salt |
1/2 lb smoked sausage, cooked and diced,about 1 1/2 cups,i use hillshire hot links |
3 tablespoons dijon mustard |
3 teaspoons cider vinegar |
3 tablespoons olive oil |
2 stalks green onions, sliced |
salt and pepper |
Directions:
1. The night before you want to make the salad, cover the lentils with 3 cups cold water. 2. Drain and rinse the lentils under cold running water. 3. Put lentils in a small saucepan. 4. Cover with cold water. 5. Add 1 teaspoons of salt. 6. Bring to boil over medium heat. 7. Lower heat and simmer until lentils are tender, about 20 minutes. 8. Drain well. 9. Cool in large bowl. 10. Combine green onions, lentils, and smoked sausage. 11. In a separate bowl mix together mustard, vinegar and oil. 12. Add to lentil mixture. 13. Season to taste with salt and pepper. 14. Toss well. 15. Refrigerate for a least one hour. 16. Serve at room temperature. 17. Will keep up to 3 days in refrigerator. |
