Easy and quick lentil salad. The french lentils cook quickly and are not mushy when you are done with them. Ingredients:
lentils (french) |
olives |
bell pepper (red or green) |
sun dried tomatoes |
vinagrette of your choosing (mustardy works well) |
Directions:
1. Prepare lentils. Bring to a boil with water, simmer until done, drain, rinse with water to take off some of the beaniness. I don't have the exact lentil instructions, sorry but your food coop should have them. 2. Pit the olives and chop coarsely. 3. Cut the bell pepper into small squares about the size of the olive bits. 4. Chop the sun dried tomatoes again to about the same size. We buy these ones that are a bit soft already; if they are tough and leathery, reconsitute them first. 5. Mix up a vinagrette. 6. Mix all the ingredients together, let stand 5 minutes, and serve. We served it tonight with rotini pasta and a glass of inexpensive white wine, to celebrate the coming of spring. |
