A light citrus lentil salad. You can add whatever you like to it - mandarin oranges, sun dries tomatoes, nuts, orzo, you get the idea. Not much you can put in it that does not go well. When making, I get free with ingredients and adjust to taste Ingredients:
1 lb french lentils |
2 sweet peppers, chopped, red, yellow, orange |
1 purple onion, chopped, medium |
1/4 cup fresh mint, chopped |
4 garlic cloves, chopped (or to taste) |
1/3 cup lemon juice, fresh |
1/2 cup olive oil |
6 ounces feta cheese, crumbled |
1/2 cup fresh parsley, chopped |
1/4 teaspoon salt |
1/4 teaspoon fresh cracked pepper |
Directions:
1. Boil lentils, cook only until al dente. 2. Cool quickly in ice water. 3. Mix all remaining ingredients. 4. Marinate to allow flavors to blend. |
