This is a creation my husband made up and mmm mmm mmm! Ingredients:
1 cup lentils |
1 cup rice |
1 large onion |
1 bunch parsley |
2 tomatoes |
1 bell pepper |
1 large carrot |
1 tablespoon dried mint |
1/4 cup lemon juice |
1/4 cup olive oil |
1 teaspoon salt |
Directions:
1. Fry chopped onions in the olive oil until golden brown. 2. Add lentils and rice with 2 cups water. Let cook for about 20 minutes until lentils and rice are tender. 3. In a separate mixing bowl, chop and combine parsley, tomatoes, bell pepper, carrot and mint. When lentil and rice mixture has cooled mix in all ingredients. Toss with lemon juice and salt. |
