Lentil Roll-Ups

Ingredients:
1 cup cooked lentils
2 tablespoons parmesan cheese, grated (optional)
1 tablespoon onion, finely chopped
1/4 teaspoon oregano, dry,crumbled
1/4 teaspoon thyme, dry,crumbled
1/8 teaspoon black pepper
1 clove garlic, minced
1 (1 lb) package phyllo pastry
2 tablespoons canola oil
Directions:
1. Puree the cooked lentils.
2. Add cheese, onion, and spices.
3. Mix well.
4. Preheat oven to 325 degrees.
5. Cut individual phyllo pastry sheets into 6 x 8 pieces and brush with oil.
6. Spread 1 tsp filling along one end of pastry sheet and roll over once.
7. Turn in pastry edges and roll up like a cigar.
8. Repeat.
9. Place filled pastries on a non-stick baking sheet and bake at 325 for 15 to 20 minutes until golden brown.
