lentil rice meal, slow cooker, adapted from THE BUSY MOM'S SLOW COOKER COOK BOOK Ingredients:
2 cups dry lentils |
2 cups uncooked brown rice |
1 cup chopped carrots |
1 cups chopped onion |
1 cup green bell pepper |
1/2 cup diced celery |
6 cups chicken broth |
3 cups water |
1 tsp garlic powder |
1/2 tsp pepper |
1 cup fresh sliced mushrooms |
Directions:
1. spray inside of slow cooker with cooking spray. 2. add all ingredients except mushrooms and mix well. 3. cover and cook on low heat for 7-8 hours or high heat for 3 1/2 - 4 hours. 4. stir in mushrooms and cook 1 hour. |
