Red lentil loaf....serve with Tomato Soup sauce. Ingredients:
2 tbsp. butter |
1 onion, chopped |
1 clove garlic, minced |
3/4 cup red lentils |
1 1/2 cup vegetable broth |
2 tomatoes, finely chopped |
1/3 cup dry bread crumbs |
1 tbsp. lemon juice |
1 tsp. dried basil |
1/2 tsp. salt |
1 egg |
Directions:
1. In saucepan melt butter & cook onion & garlic until softened. 2. Stir in lentils until coated. 3. Add stock, bring to boil, reduce heat & simmer covered approximately 30 mins or until lentils are tender. Let cool slightly. 4. Mash lentils and add remaining ingredients. 5. Transfer to a greased 8 x 4 loaf pan and bake at 350 degrees F for 45-60 minutes, or until no moisture appear s on knife when inserted in centre. 6. Let stand 10 mins. 7. Run knife around edge & invert on platter. |
