Lentil Hummus With Black Olives |

It's a great recipe to make if you have leftover lentils. It has an even lighter and more delicate texture than regular houmous. The olives give it a little kick. You could substitute black olives for kalamata or green ones. Enjoy with grilled vegetables or warm pita bread. It's my perfect summer appetizer! Ingredients:
1 cup cooked lentils |
1/2 cup pitted black olives |
1/2 cup olive oil |
1/4 cup lemon juice |
1 garlic clove |
2 teaspoons salt |
Directions:
1. Combine all ingredients in a food processor and blend until smooth. 2. Add olive oil, lemon or salt to taste. |
