Lentil Ground Beef Alternative for Veggies |

This tasty alternative to traditional ground beef is extremely versatile and can be used in all the same ways, as a topping for baked potatoes, with mash, pasta or layered in a lasagne. Ingredients:
2 tablespoons vegetable oil |
1 onion, finely chopped |
1 large carrot, finely chopped |
3 stalks celery, finely chopped |
4 1/2 ounces red lentils |
1 (7 ounce) can tomatoes |
2 1/2 cups vegetable stock, made with a stock cube |
1 tablespoon soy sauce |
1 teaspoon dried herbs |
salt & freshly ground black pepper |
Directions:
1. Heat the oil in a large saucepan and cook the chopped vegetables for about 5 minutes over a medium heat until lightly coloured. 2. Add the remaining ingredients and bring to a simmer. Cover and cook for about 20 minutes until tender and serve as wished. |
