A unique addition to lentil soup. Ingredients:
1 cup dry lentils, rinsed |
2 slices bacon, diced |
1/2 cup chopped onion |
1 cup chopped celery |
1/2 cup chopped carrots |
8 cups water |
2 cups canned tomatoes |
1 bay leaf |
6 frankfurters, sliced |
salt to taste |
ground black pepper to taste |
Directions:
1. Saute bacon and onion. 2. Place lentils, bacon, onion, celery, carrots, water or stock, tomatoes, and bay leaf together in a large pot and simmer until tender, about 45 minutes. 3. Add sliced wieners and salt and pepper to taste, and continue cooking for about 10 minutes. |
