Lentils, feta cheese, celery and onion - a refreshing, nutritious salad. Ingredients:
1 1/3 cup lentils |
3/5 grams bay leaf , about 2 bay leaves |
1 cup celery, diced |
4 tbsp cilantro, finely chopped |
1/2 red onion, diced |
1/2 cup feta, crumbled |
4 tbsp olive oil |
2 tbsp rice vinegar |
1/8 tsp salt |
1/8 tsp pepper |
Directions:
1. Place lentils and 2 bay leaves in sacepan, cover with 500ml of water. Bring to boil. Cover, lower heat and simmer for 20 minutes or until lentils are tender. Discard bay leaves, drain lentils, set aside to cool. 2. While lentils are cooking, chop celery, onion and cilantro. 3. Toss cooled lentils with chopped ingredients in medium-sized bowl. Whisk together oil and vinegar then dress salad. Season with salt and pepper to taste. |
