A healthy lentil dish that can be eaten on its own or as part of a main meal. It can also be used instead of beef mince in a vegetarian bolognese if you use vegetarian stock instead
Ingredients:
2 stalk, medium (7-1/2 - 8 long) celery
3 small onions
1 large (2-1/4 per lb, approx 3-3/4 long, 3 dia) peppers, sweet, red
2 clove garlic
3 medium carrots
250 grams lentils, mature seeds
2 cube chicken stock cubes
2 cup (8 fl oz) water
35 grams tomato puree
1 tbsp olive oil
Directions:
1. Wash the lentils well. Put a tablespoon of olive oil in a large pan. Add all veg, except lentils and soften in a pan for 10 minutes. Prepare the stock of your choice. Add in lentils, stirring continually, adding puree. Add stock. Simmer for 45 minutes. Check by tasting. If you want to add salt, do it now, not before or the lentils won't soften. This dish can be refrigerated and/or frozen.
