This is from Weight Watchers Momentum Fast Fixes. It has 5 points/255 cal per serving and makes 4 servings. We love this recipe, as it is both filling and spicy. Very good on a cold day. It is also very quick to make-prep time of 15 minutes tops with most of that going to grating the ginger. My family turned their noses up at this when I read the recipe to them, but it has quickly become one of our family go-to recipes. Ingredients:
4 teaspoons canola oil |
1 chopped onion |
4 chopped garlic cloves |
2 tablespoons grated fresh ginger |
2 teaspoons curry powder |
1/2 teaspoon red pepper powder |
1 cup dried red lentils (i have used french and regular as well without trouble) |
2 (14 ounce) cans vegetable broth |
2 1/2 cups water |
1 (10 ounce) package frozen spinach |
salt |
Directions:
1. Saute onions in oil till translucent, stirring frequently. 2. Add garlic, ginger, curry, and pepper flakes; cook stirring frequently till fragrant, about 1 minute. 3. Add lentils and veggie broth and water. Simmer till tender, about 20 minutes. 4. Add spinach and cook until heated through. Add salt to taste. |
