Lentil, Cucumber, and Radish Salad |

Dean Ornish - Heart Healthy! Great source of fiber. Ingredients:
1 cup dried lentils |
2 cups vegetable broth |
1 1/2 cups cucumber, peeled, seeded, and sliced thin |
1/2 cup radishes, sliced thin |
1/4 cup rice vinegar |
2 tbsp fresh chives, chopped |
2 tsp fat-free italian dressing |
1 fresh ground black pepper |
Directions:
1. Rinse the lentils in a sieve. Combine lentils and broth in a pot and bring to boil. Reduce heat to moderate-low and cook, partially covered, about 25-30 minutes, or until lentils are just tender. Do not overcook! Drain and let cool. 2. Combine cucumbers, radishes, and vinegar in a bowl and toss to mix. Let marinate 15 to 20 minutes. 3. Gentley stirr in lentils, chives, and salad dressing. Season to taste with pepper. |
