What a nice side dish to add extra nutrition and fiber to a meal! Cook time does not include cooking the lentils & rice. Ingredients:
1 c. cooked lentils |
1 c. cooked white or brown rice |
1 tomato, diced |
1 carrot, sliced, diced or grated |
1 stalk celery, diced |
1 small onion, diced |
italian dressing to taste |
Directions:
1. Cool lentils & rice. 2. Add rest of ingredients. 3. Chill before serving. |
