This is my GS fave. It is delicious, and nutricious. You can use Veg stock, and vegan sausage to feed vegetarians. Ingredients:
2 cups beef stock |
1 cup green lentil |
1 celery rib, finely diced |
1 large carrot, finely diced |
1 garlic clove, finely minced |
1 bay leaf |
1 teaspoon thyme |
1/4 teaspoon fresh black pepper |
1 tablespoon worcestershire sauce |
2 large onions, thinly sliced |
1 tablespoon butter |
1 tablespoon olive oil |
1/4 cup balsamic vinegar |
1 cup finely choped smoked sausage or 1 cup ham |
Directions:
1. Combine first 9 ingredients in an oven proof casserole with a lid 2. Cover and Bake in 350° F oven for an hour or until lentils are tender. Check liquid from time to time and add a little water if necessary. 3. In a separate pan saute onions in butter and oil until deeply carmelized. 4. Add Balsamic vinegar to onions. Stir together. 5. When Lentils are tender add onion mixture, and smoked meat and heat for 10 minute Adjust seasoning to your taste. |
