Red Lentils cooked with tomato, onion and carrot served on spaghetti Ingredients:
1 onion |
1 clove garlic |
1 large carrot |
1 stalk celery |
400 g tomatoe (tin, chopped) |
2 tbsp tomato puree |
500 g stock |
60 g split red lentils |
1 tsp marjoram dry (tbsp of fresh) |
100 g spaghetti (whole wheat dry) |
Directions:
1. Fry an onion, some garlic and a carrot chopped up small and some celery if you like. 2. Add tin of toms, tom puree (or use 2 tins and reduce), half pint veg stock , split red lentils and marjoram (tbsp of fresh). 3. Cook for around 30 mins or until reduced to a nice constancy and serve with pasta of choice...spag or linguine are best. |
