Spicy sweet-sour baked dish, brought to South Africa by Malay slaves. Cheap to make and very comforting. Ingredients:
5 slices brown bread |
2 cups skim milk |
2 2/3 cups lentils |
3 (200g) onions, chopped |
1 (120g) apple, peeled and chopped |
6 tsp curry powder |
2 tsp turmeric |
2 tsp coriander |
1 tsp cumin |
90 ml vinegar |
4 oz chutney |
4 eggs |
60 ml raisins |
Directions:
1. boil lentils in 5 cups water until soft, then rinse and drain. 2. while lentils are cooking, soak bread in 1 cup milk. 3. mash bread with a fork and add to lentils. 4. fry onions and apple in non-stick pan. 5. add spices, vinegar and chutney. 6. pour onion mixture into lentil mixture. 7. add 2 eggs and 60ml raisins. 8. spoon into baking dishes. 9. mix together remaining cup of milk and remaining 2 eggs. 10. pour this mixture on top of the lentil mixture, stick a few bay leaves vertically into the top, and bake at 180 degrees celsius for 30 to 50 minutes. |
