vegetarian soup Ingredients:
2 tbs olive oil |
2 garlic cloves, crushed |
1 onion |
1/2 tsp turmeric |
1/4 tsp garam masala |
1/4 tsp chili powder |
1 tsp chili powder |
28 ounces chopped tomatoes |
1 cup red lentils |
2 tsp lemon juice |
2 1/2 cup vegetable broth, 50% less sodium |
1/4 cup coconut milk, lite |
1 salt |
1 pepper |
Directions:
1. soften Onions and garlic in butter on low heat for two minutes 2. add tomatoes, lentils, lemon juice, vegetable stock. Coconut milk, and bring to a boil. 3. reduce the heat and simmer for 25-30 minutes. Until lentils are cooked. 4. Ready to eat. |
