This is a wonderful soup for the weekends! Ingredients:
1 c. of dry lentils |
1 (10 oz.) bag of torn fresh spinach |
4 oz. of chopped turkey kielbasa |
1 minced onion |
1 chopped carrot |
1/2 tsp. of crushed red pepper flakes |
6 c. of water |
2 c. of reduced sodium chicken broth |
1/3 c. of uncooked white rice |
2/3 c. of water |
1 tsp. of vegetable oil |
Directions:
1. First you want to let your rice come to a full boil. 2. Lower your flame to low and let this simmer(covered) approx. 20 min. 3. Next you want to add olive oil to pan over medium flame. 4. Saute your kielbasa until brown. 5. Next add in your onion, carrot and red pepper seasonings, cook until done. 6. Pour in your water, broth, and lentils. 7. Let this come to a boil, then lower flame to low approx. 25 min. 8. Finally, stir in rice and spinach, cook approx. 5 more min. 9. Ladle into soups! Enjoy! |
