Lentil And Pea Soup With Bourbon

Wonderful recipe to use a little Bourbon :) to warm the cockles of your heart! :) Stay warm!
Ingredients:
1 onion, chopped
1 bell pepper, chopped
3 cloves of garlic, sliced
2 carrots, cut in rounds
1/2 cup green split peas
1/2 cup red lentils (or yellow split peas)
2 tsp fresh rosemary, chopped (or dried)
1 tsp crushed red pepper/ pepper flakes
1/2 tsp black pepper
1/2 tsp paprika or red chili powder
salt
2 tbsp olive oil or butter
6 cups of vegetable stock or beef broth/ or if you prefer, just water
the most important ingredient 1/2 cup bourbon (use a good quality)
**when using a regular pot, boil peas and lentils for an hour or soak in water overnight.
Directions:
1. -Heat the oil in a big pot and add onion, garlic, and pepper. Stir until onions are cooked
2. -Add carrots and 1 tsp rosemary, and cook for 4-5 minutes
3. -Add paprika and stir for a minute
4. -Put in split peas, lentils, bourbon, broth, black pepper, crushed pepper, and salt.
5. With a regular pot, cook for 45 minutes on medium heat
6. -I used a hand blender to puree the soup and garnished it with the rest of the rosemary. If you want to have it chunky, you may want to cut everything into smaller pieces, especially the carrots.
7. Serve with crusty bread and can be stretched to 8 mugs if serving for a crowd (Tailgate).
