yummy with rice mopped up with a garlic and coriander naan. Ingredients:
4 ounces red lentils |
1 medium onion, chopped |
450 ml stock, vegetable |
3 garlic cloves, chopped finely |
1/2 teaspoon turmeric |
1 teaspoon paprika |
1 teaspoon ground coriander |
1 teaspoon ground cumin |
240 grams canned butter beans |
Directions:
1. Throw everything apart from the butter beans int a saucepan and bring to the boil, lower the heat and simmer for 15 minutes and then add the chick peas and cook until lentils are tender, about 5-10 and serve. |
