About the most comforting supper I know.
Ingredients:
200 g red onions
130 g butternut squash
450 g sweet potatoes
800 g tomatoes, canned
15 ml oil
300 g lentils
500 g pasta, dry
Directions:
1. Pre-cook lentils, boil pasta until just tender and steam butternut.
2. Fry onion in oil. Add tomatoes, garlic and basil.
3. When nearly cooked, add lentils and butternut and cook 10 more minutes.
4. Add drained pasta to the sauce.
5. Serve with grated parmesan.
