Hearty Lentil stew, very healthy Ingredients:
1 cup dried lentils, rinsed and picked over |
1/2 cup long grain brown rice |
3 cups chicken broth, college inn light & fat free chicken broth 50% less sodium |
4 cups water |
2 teaspoons salt |
1/2 teaspoon dried oregano |
1/4 teaspoon dried thyme |
1 fresh ground pepper, to taste |
2 garlic cloves, minced |
3 stalks celery, chopped |
1 small yellow onion, chopped |
3 carrots, sliced |
14 1/2 ounce diced tomatoes, with juice |
1 tablespoon cider vinegar |
1 bunch spinach leaves, stems removed and rough chop |
Directions:
1. Add lentils to a large soup pot. Add in the next 11 ingredients; stir. 2. Bring to a boil; lower heat to medium-low and simmer, covered for 45 minutes. 3. Add in tomatoes, spinach, vinegar, and simmer over low heat, uncovered, for about 15 minutes. 4. Ladle into individual bowls and sprinkle with parmesan cheese. 5.
