Use a smokey bacon for best flavor. If you prefer not to spoon off the bacon fat omit the olive oil. Ingredients:
1/2 lb lentils |
4 ounces bacon, chopped |
2 celery ribs, sliced |
1 large carrot, diced |
1/2 large onion, diced |
1 large potato, diced |
1 1/2 teaspoons salt |
4 cloves, ground |
6 cups water |
2 tablespoons olive oil |
Directions:
1. Dice the onion and cook with the chopped bacon over medium low heat until the onion is soft and the bacon is lightly brown. 2. spoon off excess bacon fat. 3. Add the lentils, carrot, celery, salt, ground cloves, olive oil and water, bring to a simmer, cover and cook for 1 hour. 4. Add the potato and simmer 25 minutes. |
