Exceptionally good and one to have with Coffee and a good chat with a friend. Ingredients:
1/2 cup butter or margarine, softened to room temperature |
1 1/3 cups sugar |
3 eggs |
3 tbsp lemon juice |
grated rind of 1 lemon |
2 cups unsifted flour |
1/4 tsp mace |
1/4 tsp salt |
Directions:
1. Cream butter and sugar together in mixer bowl (or about 100 strokes if doing by hand with a whisk). 2. Add in eggs, one at a time, whisking/beating well after each addition. Add lemon juice. In another bowl, combine lemon rind, flour, mace and salt. Pour in butter-egg mixture and continue to stir until well-combined. 3. Using a small ice cream scoop drop scoopfulls of the dough (about 1 1/2 teaspoons) onto lightly greased baking sheet. 4. Bake at 350 degrees F for 10-12 minutes or until lightly golden and bottom is lightly browned. 5. Remove from oven, cool for 3 minutes on rack then transfer with spatula onto cooling racks. 6. When cool, store in airtight container for up to 3 days. |
