I got this from the Pennsylvania State Grange Cookbook. It was submitted to them by Pearle Malone of Mendon. I've doubled the amounts. They are my favorite! Ingredients:
3 (12 ounce) cans chunk light tuna, drained |
1 cup butter cracker crumb |
1/2 cup chopped onion |
1/4 cup chopped bell pepper |
3 eggs, beaten |
1/2 cup lemons or 1/2 cup lime juice |
1 1/2 teaspoons dried dill weed |
1/2 cup cracker crumb |
2 tablespoons margarine or 2 tablespoons butter |
Directions:
1. Combine all ingredients except 1/2 cup cracker crumbs; mix well. 2. Shape into 12 patties. 3. Coat with cracker crumbs. 4. Brown on both sides in margarine in a large skillet at medium heat. 5. Serve with tater sauce or lemon. 6. May heat in the microwave on high for 3 - 5 minutes. |
