Super Quick. A light, lemony vinaigrette adds a refreshing twist to this traditional strawberry-spinach salad. Ingredients:
1 (10-ounce) package trimmed fresh spinach, torn |
2 cups sliced fresh strawberries |
1/2 cup thinly sliced red onion |
1/3 cup fresh lemon juice |
3 tablespoons sugar |
1 tablespoon vegetable oil |
2 teaspoons grated lemon rind |
freshly ground black pepper |
Directions:
1. Combine first 3 ingredients in a large bowl. 2. Combine lemon juice, sugar, and oil in a small bowl; stir with a whisk until blended. Stir in lemon rind. Pour over spinach mixture; toss. Sprinkle with pepper. |
