Ingredients:
3 tablespoons fresh lemon juice |
3 tablespoons olive oil |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
3 heads romaine lettuce, halved lengthwise |
2 cups thinly sliced pickling cucumber (about 2) |
Directions:
1. Combine first 4 ingredients in a small bowl, stirring with a whisk. Place a lettuce wedge on each of 6 plates; sprinkle with cucumber slices and drizzle with dressing. |
