found this recipe in the Chicago sun times food section. It is very flavorfull. I roasted potatoes right along with the chicken because I like potatoes. Very easy to make. Ingredients:
3 1/2 lbs chicken, cut into 8 pieces |
1/2 cup extra virgin olive oil |
1/2 cup fresh rosemary leaf |
1/4 cup fresh lemon juice |
10 garlic cloves, thinly sliced |
1 lemon, peel removed, pit and pulp chopeped |
kosher salt & freshly ground black pepper |
Directions:
1. toss chicken pieces with olive oil, rosemary,lemon juice, garlic, lemon and saltand pepper to taste in a bowl or bag. 2. marinate for about 1 hour. 3. heat oven to 475 degrees. 4. arrange chicken in (9-by 13-inch) backing dish and remaining marinade. 5. roast turning once untill cooked through 30 to 40 minutes. |
