Lemony Potato Salad

Lemon adds a special zing to this creamy potato salad. Using fingerling potatoes provides buttery texture and a slight sweetness but other potatoes can work here too.
Ingredients:
1 pound fingerling potatoes
sea salt and black pepper, freshly ground - to taste
1/4 cup mayo
1 lemon zested & juiced
3 celery stalks, chopped
1-2 scallions/green onions, sliced
*if you want to add fresh herbs, like parsley, feel free! i wanted to but i didn't have any.
Directions:
1. Place potatoes in a pot of salted water and bring to a boil. Cook until fork tender, about 5-10 minutes. Drain and cool.
2. Meanwhile, combine mayo, juice from half the lemon and about 1 tbsp of zest with salt & pepper to taste.
3. Once potatoes can be handled safely, slice or cut into chunks. Toss with mayo mixture, scallions, and celery. Refrigerate until ready to serve.
