I LOVE citrus - and these muffins fit the bill! I fill my muffin cups fairly full so I usually get less than 24 muffins. Ingredients:
1 cup sugar |
2/3 cup shortening |
2 eggs |
2 tablespoons fresh lemon juice |
3 cups sifted all-purpose flour |
3 teaspoons baking powder |
1/2 teaspoon salt |
1 teaspoon ground nutmeg |
1 cup milk |
1 1/2 cups powdered sugar |
3 tablespoons freshly squeezed orange juice |
2 tablespoons grated orange zest |
3 tablespoons powdered sugar |
2 tablespoons grated orange zest |
1/2 cup unsalted butter, softened |
Directions:
1. Cream sugar, shortening, eggs and lemon juice. 2. Sift together flour, baking powder, salt and nutmeg. 3. Add to creamed mixture alternately with milk, beating after each addition. 4. Fill 24 greased or paper lined muffin pans 2/3 full. 5. Bake at 350°F for 20-25 minutes. 6. Brush muffins with orange glaze while still warm. 7. Serve warm with chilled orange butter. |
