Lemony Light Waldorf Salad |

A simple and unique version of the popular Waldorf Salad that combines fruits, vegetables and greens. Very healthy! Ingredients:
1/2 cup raw honey or agave |
juice of one small lemon |
4 cups of mixed red and romaine lettuce, chopped |
2 ripe red apples, any variety, chopped |
3 wands of celery, diced |
2 cups of red or green grapes |
1 cup of raw walnuts, soaked and drained |
Directions:
1. Combine honey and lemon in large mixing bowl and whisk together until well incorporated. Place remaining ingredients in bowl and mix gently until everything is coated with dressing. Transfer to salad plates and dust with cinnamon. |
