Prep: 2 minutes; Cook: 5 minutes. The light lemon flavor of these fresh beans is a nice complement to roasted turkey, chicken, or pork tenderloin. Ingredients:
2 tablespoons light butter |
1 teaspoon grated lemon rind |
2 teaspoons fresh lemon juice (about 1/2 lemon) |
1/4 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
4 cups green beans, trimmed (about 1 pound) |
2 tablespoons water |
Directions:
1. Place butter in a microwave-safe bowl; microwave at HIGH 20 seconds or until melted. Stir in lemon rind and next 3 ingredients. Set aside. 2. Place beans in a large microwave-safe bowl; add water. Cover and microwave at HIGH 3 to 4 minutes or until crisp-tender. Drain well. Toss beans with butter mixture. |
